Consultant in slaughterhouses and meat processing facilities. Reviewer of technological operations on the slaughter line, optimization of heat treatment (pasteurization and sterilization) in the production of meat products, prevalence of Salmonella spp on poultry meat, HACCP system optimization for meat business subjects

– Prevalence of Salmonella spp on carcases (cattle, pigs and poultry) from the aspect of improving the hygiene of the carcass production process and ensuring the safety of meat and meat products

– Control, monitoring and optimization of the heat treatment process (pasteurization, cooking and sterilization) in the production of meat products

– Recording and reviewing technological operations on the slaughter line (cattle, sheep, pigs and poultry), with active training of slaughterhouse staff

– Reviewing and solving existing technological problems in the production of meat and meat products

– Optimization of the Food Safety Assurance System (HACCP) for food business operators

– Risk analysis in meat and meat products production

– Assistance in the preparation and conception of the plan of self-control of food business operators, in accordance with current legal regulations

– Provision of training for professional staff, HACCP team and employees by topics: HACCP system, Prerequisites: Good hygiene practice (GHP), Good manufacturing practice (GMP), Standard operating procedures (SOP), Standard sanitation operating procedures (SSOP), Animal Welfare, Heat Treatment, and many other topics.
