AREA OF SCIENTIFIC INTEREST
Salmonella spp. – presence in the food chain (especially poultry), the risk analysis, consideration of places of contamination of the food chain, considering the possibility of elimination from the food chain, or reducing its presence to the lowest possible level. Analysis of the whole production chain and determination of particularly critical areas, where the contamination by this pathogen occurs.
Technology of meat and meat products – 2016 enrolled in postgraduate studies in the field of technology of food of animal origin at the Faculty of Veterinary Medicine in Belgrade. Aspects of food safety and hygiene of the production process. Analysis of the trend of production.
Slaughter line – technological operations at slaughter line of large livestock and poultry
HACCP food safety assurance system – development, validation of the existing risk analysis, defining and control of the critical control points on the flowchart of production, defining corrective measures.
Heat treatment of meat products – process optimization. Correcting existing thermal regimes of heat processing of meat products, ensuring product safety and optimization of production costs
