The Institute for Meat Hygiene and Technology participated in obtaining the geographical indication (designation of origin) for “Pirotska peglana kobasica”

Products with protected geographical origin represent some of the highest values a country can offer to both domestic and international markets. Such products are created through long-standing tradition, authentic technology, and the use of high-quality raw materials.

The Institute of Meat Hygiene and Technology was recognized by the City of Pirot as a competent institution for the preparation and implementation of the Project for obtaining the designation of origin for “Pirot Ironed Sausage” (Pirotska peglana kobasica). The Institute’s Laboratory for Biotechnological Research and Control of Food Safety and Quality has more than 65 years of experience in food testing for domestic and international markets.

“Pirot Ironed Sausage” is a premium traditional product and an important part of the cultural and gastronomic heritage of the Pirot region. It is produced exclusively in winter, using high-quality beef, goat, and sheep meat, without thermal processing, additives, preservatives, or added fats.

Based on extensive chemical, sensory, and microbiological testing, and detailed documentation of the traditional production process and geographical area, the product was officially registered in 2022 in the Register of Geographical Indications of the Intellectual Property Office under No. 81, as a designation of origin.

Future activities will focus on protecting the geographical indication of “Pirot Ironed Sausage” at the international level, further strengthening the visibility of the Pirot region and Serbia on the global tourism and gastronomy map.
