AREA OF SCIENTIFIC INTEREST

Long-time scientific research related to the area of hygiene and food technology, mainly food microbiology, i.e. quality and safety of traditional fermented meat and milk products; the isolation and characterization of autochthonous strains of lactic acid bacteria (LAB); the production of their antimicrobial metabolites – bacteriocins and determining their applicability in the food industry; application of plant extracts as anti-oxidative and anti-microbial compounds for the extension of the natural sustainability of products and reducing the risk of pathogenic micro-organisms, as well as the development and introduction into operation of new microbiological methods.
